  • Any wide noodle (linguine, pappardelle, tagliatelle, fettuccine) works well.
  • Substitute heavy cream for half and half to reduce fat (but also tastiness).
  • Avoid pre-grated cheese at all costs.

ingredients

  • pasta
  • heavy whipping cream
  • olive oil
  • salt
  • garlic
  • black pepper
  • parsley
  • parmesean cheese block

steps

  1. bring a large pot of salty water to a boil.
  2. mince garlic.
  3. add pasta and cook to slightly below al dente (pasta will keep cooking in the sauce).
  4. add a few tbsp’s of olive oil to a pan over medium-high heat.
  5. simmer garlic until slightly browned.
  6. add heavy cream to the pan.
  7. add pasta and a few spoons of pasta water to the pan.
  8. toss pasta and sauce. add parsley, salt, and black pepper to taste.
  9. turn off heat, and grate a generous amount of parmesean cheese over the pasta. mix well and serve immediately.
